Creamy Chicken Vegetable Bake

Serves: 4

Prep Time: 10 minutes, Cooking Time: 45 minutes


2 large potates, peeled and finely sliced

500g chicken thighs, boneless and skinless cut into 3cm pieces

1 onion, peeled and finely chopped

1 cup grated pumpkin

2-3 cups chopped vegetables chunky style (choose what you like, Broccoli, Califlower, Carrots)

420g can condensed creamy chicken soup

2 tbs chopped parsley

1/4 cup fresh breadcrumbs and grated cheese

How To Combine:

1. Preheat oven to 180C (fan bake)

2. Place the sliced potatoes in an overlapping layer in the base of a lasagne style dish

3. In a bowl, mix together the chicken, onion, grated pumpkin, vegetable mix, creamy chicken soup and parsley

4. Spread the mixture evenly over the potatoes

5. Sprinkle with the bread crumbs and cheese

6. Bake for 50-60 minutes or until chicken is cooked through
